There are three types of extended chords – Major, Minor and Dominant. You can substitute (for the most part) any major extended chord with any major chord, any minor extended chord with any minor chord and any dominant extended chord with any dominant chord. Use your ears to know what’s best. I find that using an extended chord for every chord can sound a little “too jazzy” but that’s not to say that in certain contexts… it doesn’t! Thanks!
